Lime Cottage Cheese Jell-O (recipe from Dawn Clifford)
- 3/4 cup boiling water
- 1/2 cup sugar
- 1 package lime Jell-O
- 1 cup cottage cheese
- 1 cup crushed pineapple (drained well)
- 1/2 cup chopped walnuts
- 8 ounce tub of cool whip
- Dissolve Jell-O and sugar in boiling water. Let stand until the Jell-O starts to set. You can put it in the refrigerator to speed this up, however do not let the Jell-O set completely.
- After the Jell-O starts to set up, stir in the cottage cheese, pineapple, walnuts, and cool whip. Refrigerate until right before serving.
